Summer Treats

Before Summer is over (insert CRYING EMOJI!), I wanted to share a few super easy Summer Treats that have been my go-to for cookouts!  I will say that I am SO sad that Summer is coming to an end, and I am all for an endless Summer.  Summers are BUSY and HOT, but they just feel more casual.  They are an excuse to skip out of work early to head home for a happy hour or trip to the pool or park with the kiddos, or eat ice cream for dinner. With all that said…who doesn't LOOOOOOVE the FALLL!?! Bring on all the pumpkin things.  But first….Summer treats!

Today I am just going to share with you 2 of the easiest desserts.  The first one can't even be called a recipe.

We'll just call this "Strawberries n' Creme"

This is comically easy, but y'all it is soo good and always a crowd pleaser! You only need 2 "ingredients".

Just grab some "Cream Horns" from the grocery store, preferably from the Bakery, and a carton of strawberries.

Slice the horns into 1/2 inch slices. Slice the strawberries & place them on top.  TADA.  FINISHED.

If you are in a pinch and need something quick and easy – this is it! SO GOOD!  You are welcome.

Next up…Tropical Fruit Pretzel Salad

A different kind of summer salad to take to the cookout.

Ingredients:

Brown Sugar Pretzels:

  • 1 cup chopped pretzels
  • 1/2 cup chopped pecans
  • 3/4 cup brown sugar
  • 3/4 cup butter, melted

Tropical Fruit:

  • 3 cups mixed diced tropical fruit (kiwis, mangos, pineapple, and strawberries)

Cream Cheese Mixture:

  • 8 oz cream cheese, softened to room temp
  • 1/2 cup granulated sugar
  • 1 tsp vanilla
  • 3 cups non-dairy whipped topping or whipped cream

Start by making the Brown Sugar Pretzels:

  1. Mix crushed pretzels, chopped pecans, brown sugar and melted butter.
  2. Spread in a large baking sheet with sides and bake at 400 degrees for 5-7 minutes.
  3. Allow mixture to cool and then break into small pieces.

Make Cream Cheese mixture:

  1. Beat softened cream cheese for 2 minutes, until light and fluffy.
  2. Add the sugar and vanilla and stir until smooth.
  3. Fold in the non-dairy whipped topping or whipped cream.
  4. Store in the fridge.

Mix brown sugar pretzels, fruit and cream cheese mixture, and serve! You can literally eat this by the spoonful or dip pretzels or Ritz crackers in it.
